This is a heart-friendly, weight-friendly chocolate cake recipe! No fat or sugar but quite delicious!
3 eggs
125 g mashed bananas (about ½ cup)
25 g dried dates
100 ml water
50 g w-w flour (about ½ cup)
25 g cocoa powder (about ¼ cup)
1 tsp. vanilla essence or ½ tsp. of almond essence
2 tbs desiccated coconut
- Heat dates in water until all the water is absorbed and they are mushy. (If you use very hard, dry dates, you may need to add more water.)
- Whisk egg yolks until pale and creamy. Add pureed banana and whisk a little longer. Add date puree.
- Whisk the egg whites stiffly and fold in. Add the sieved flour, cocoa powder and vanilla. Fold in.
- Bake 7-10 mins at 200 ยบ.
