This cake is so healthy you can eat a piece every day with your coffee without compromising your health. And it's delicious!
Carrot Cake
100g dates
100ml water
225g grated carrots (about 1 3/4 cups)
75g whole wheat flour (3/4 cup)
25g wheat germ (about 1/4 cup)
25g desiccated coconut (1/4 cup)
50g ground almonds (1/2 cup)
1/2 tsp soda
½-1 tsp mixed spice (or cinnamon and a pinch of ground cloves.)
1 egg
1 tsp grated orange zest
150 ml yogurt
Cook dates and water until water has been absorbed. Mash with a fork. Mix grated carrots with paste. Add well beaten egg and orange zest. Fold in yoghurt. Mix dry ingredients in a separate bowl and then add to the wet ingredients. Cook 190 degrees for 40 mins. Each slice = 100 kcals.
